Living Ale
A Firkin is and English Style Cask, also referred to as a cask conditioned beer. It is 10.8 gallons of unfiltered beer that is naturally carbonated to a lower level than draft beer.
Typically the English style beer is best suited to this, but it is not the rule.
Delivery should be 2-3 days prior to tapping to give the establishment time to cellar or rack the Firkin properly. This gives the ale time to have the sediment settle again after the jostling the cask receives during the delivery.
